Noé Bonillo Ramos
Noé, originally from Spain, borned in the Mediterranean coast of Valencia, got from his family the passion for gastronomy. He began in the culinary world when he was only 14. At this age, Noé was already working and studying. His great passion for this art made it an easy task to get the degrees of cooking, waiter, bartender and wines’ sommelier.
At age of 18, in Valencia, he discovered his passion for the iberian ham, boning and cutting high-quality pieces. He continued his career showing his skills in the gastronomic world without losing the magic and excellence of cutting iberian ham. Combining these two arts, an idea was born and began to take shape the HAM ARTIST, meanwhile he still work for important hotels and catering chains. With 25 years he was head waiter in Sorolla Palace 5 star hotel ( Valencia) and also he kept doing his catering work in the City of Arts and Sciences (Valencia ), as maitre organizing events for more than 500 people and leading teams of more than 35 professionals.
Eventually, following the path of ham he was called to share stage with spanish cutting champions. Among them, there was an already recognized ambassador of ham, Florencio Sanchidrian. Within all this, Noé never gave up improving his gastronomic experience, consolidating even more his passion for ham’s culture.
Noé, already being recognized for his expertise , was requested by large companies to educate and train their employees , given his extensive knowledge of ham and his full-time work in professional cutting , he began to teach courses in Italy , Sweden , Belgium , Germany , France and of course in Spain.
In 2013 his spirit of improvement led to prepare himself with perseverance and dedication to be proclaimed the youngest ham cutter in the world achieving a Guinness World Record, as the man who has been cutting iberian ham for the longest time in history. He was able to cut uninterruptedly 30 hams in 33 hours.
Noé became the world champion cutting hams with 26 .
In 2014, with only 27 years old, he is a teacher in “Cultura del Jamón Ibérico”, in the prestigious and worldwide known culinary and restoration high school in “Le Cordon Blue” (Paris). He has served relevant personalities as the actual King of Spain, Felipe VI, Ferrán Adriá, the Google’s CEO Larry Page and political personalities among others.
In 2015, Noé achieved another feat in his cutting ham career: He cutted ham for seventy-two hours, thirthteen minutes and eight seconds. Therefore he exceeded himself and made another Guiness Record in cutting ham resistance. He achieved this thanks to the support of UNICEF and valencian ham company “Olmedo” in the campaing: “A slice of ham, a mouth to feed”
